CHICKEN FAJITAS

I could literally eat these all day, everyday.
I think I am in serious denial that Summer has ended... It's quite muggy here, but the rain and sticky wet leaves on the deck keep reminding me that autumn is here. Boo! I haven't finished with my summer food experiments!!
Though this recipe is a great transition, the chicken and capsicum salsa is warm and comforting, while the lime and sour cream sauce give it that fresh kick!

INGREDIENTS

Chicken:
4 boneless, skinless chicken breasts
1 tablespoon paprika
1 tablespoon minced garlic
1 tablespoon cajun seasoning
2 teaspoons onion powder
juice of half a lime
2 teaspoons salt
2 tablespoon olive oil
freshly ground black pepper, adjust to your taste
1-2 teaspoons cayenne pepper, adjust to your taste

Capsicum Salsa:
1 large red capsicum
1 large red capsicum
1 brown onion
2 teaspoons onion powder
2 teaspoons garlic powder
1 tablespoon finely chopped coriander
1 tablespoon oil

Sour Cream Sauce
1/2 cup sour cream
juice of half a lime
tablespoon of coriander, finely chopped
Salt & pepper, adjust to your taste

Mini wraps / soft taco wraps
Chopped coriander to garnish
Lime wedges to garnish

METHOD

Combine chicken seasoning ingredients & oil together in a bowl, and mix well to combine.
Rub each chicken fillet in the seasoning on both sides & let to sit for 20 minutes.
Heat 1 tablespoon of oil in a grill pan (or on a grill or skillet) over medium-high heat until hot (not smoking). Grill chicken fillets on each side until golden, crispy and cooked through. Once chicken is cooked, set aside and allow to rest.
Finely chop the onions and thinly slice the capsicum. Heat 1 tablespoon of oil in a pan over medium-high heat until hot. Brown the onion then add the capsicum.
add the rest of the ingredients to the pan and mix. Cook for around 5 mins or till capsicum has softened.
Shred / cut the chicken length ways into small strips.
Layer on capsicum salsa to 1 wrap, a few pieces of chicken, then apply a teaspoon of the sour cream mix. Garnish with coriander and a squeeze of lime. 
Continue to make wraps and continue to eat! :)
