MINI LAMB SLIDERS, 3 WAYS

Wondered up to the local market on my day away from Theo, I came across these mini rolls I keep seeing everywhere, I knew straight away I wanted to try some mini sliders. I didn't want to stick to the same fillings, (I had about 8 rolls) so I thought to get creative.

I picked up some halloumi, I've never cooked with it before, but I knew it was delicious.
I started to create mini burgers in my head, I had some left over chutney, Barton wanted to use his blue cheese he got from the food show, & I had a few different ideas I wanted to try. 
They aren't rocket science combinations, I wanted them to be simple and fresh.

These are the 3 sliders I came up with:

• Aioli Coleslaw & Blue Cheese 

• Grilled Halloumi, Sundried Tomato & Spinach 

• Feta, Rocket, Fresh Cucumber & Tomato with Homemade Sweet & Spicy Chutney

Aioli Coleslaw & Blue Cheese
I realised I had run out of mayonnaise, and I wasn't up to going back to the market in the rain for a smidge of mayo... I experimented with some garlic aioli and it tasted good! This is definitely my go-to coleslaw for my next burger.

Grilled Halloumi, Sundried Tomato & Spinach
Grilled Halloumi.... oh my oh my, this stuff is so tasty. I could just eat pieces of this with a bit of sundried tomato. This could've been a great vegetarian burger with just the 3 fillings, but it paired really well with the lamb.

Feta, Rocket, Fresh Cucumber & Tomato with Homemade Sweet & Spicy Chutney
This was my favourite!, I had made a chutney a few days earlier, and it went so well with the lamb and feta, I also loved crunching into the fresh cucumber & tomato. I could defiantly see my self making bigger versions of this... yum!
