SATURDAY AFTERNOON SNACK: MINI PITA POCKETS

After a lovely day out with the family, (famers market & a few hours at the park) I stopped in at the Italian Deli. I picked up just a few things to make an afternoon snack.
We were all quite full from the taste testing at the market. I saw these mini pita pockets and decided to make some light vegetarian sandwiches.

These pockets were filled with grilled halloumi, sundried tomato, spinach, cherry tomato & fresh avocado. I had mixed olives and stuffed capsicum on the side to pick at.

So simple & so fresh! xox
